Ras el hanout, which translates literally as “Head of the Shop”, originated in the Meghribi villages of North Africa. It is a complex & distinctive aromatic blend with a fragrant, warm flavour while the cinnamon, cloves & nutmeg also add sweet accents. Use in marinades, as a rub, as a seasoning in many dishes like stews & tajines. It can also be used with poultry, meat, game, fish, vegetables, rice & couscous dishes. It makes an excellent addition roasted chicken or lamb burgers. Add to minced chicken, lamb, turkey or pork with a little chopped onion to make your own spicy Moroccan burgers.

Using a small sharp knife, cut three or four slits across the lamb. Mix olive oil & Ras el Hanout in a bowl to form a paste. Then rub this aromatic paste all over your lamb & leave to marinate for a minimum of 2 hours or overnight in the fridge.
