Whole Dried chillies a perfect standby for when you have no fresh chillies for your recipe. They are most commonly used in Indian curries, but also work for Mexican & Thai dishes where you need heat & flavour. Add whole chillies to pickles to add spicy heat, or infuse a few chilies in oil to make a chilli flavoured oil to use for stir fries & roasts. Make sure you remove the whole chilli before serving the dish, unless you like lots of spice. The longer a dish is cooked with chillies in it, the spicier the finished dish will be.
