Cous Cous Salad – Place cous cous into a large heatproof bowl and add boiling water. Set aside until liquid has absorbed. Add pomegranate seeds, cucumber, mint, parsley, olive oil, feta cheese and toasted pine nuts. Season with salt and pepper. Toss together and drizzle with Pomegranate dressing to serve.
