Madras Curry powder is an authentic blend of Indian spices that has a lovely depth of flavour and more heat than our regular curry powder. Use to season meat, poultry, and fish. Add to rice, sauces, lentils, beans, and vegetables. A pinch of curry powder can be added to egg and cheese dishes. You can also mix curry powder with natural yoghurt to make an aromatic marinade for chicken or lamb. Thread chunks of the marinated meat onto skewers and grill or barbeque. Add to breadcrumb coatings for chicken or fish or sprinkle onto homemade potato wedges.
To make a basic curry sauce base simply sauté diced onion, ginger, and garlic until they soften. Add curry powder and mix in well, do not allow it to burn or the spices will take on a bitter flavour. Add your chosen meat or vegetables and ensure that it is well coated in the spice mixture. Cook until the meat is evenly browned on the outside. Next add coconut milk or chopped tomatoes and water, simmer until the meat is thoroughly cooked.
