Birdseye chillies may be small but they are very hot, packed with heat & flavour, so use with care! They can be used instead of fresh chilies. They give a fiery heat which intensifies with cooking. Heat them in oil until they increase in size. They are extensively used in Chinese, Indian & Thai cuisines. Add to sauces, soups, stews, curries, stir fries, pickles & relishes. Or infuse some Birds eye chilies in olive oil or vinegar that can be used in salad dressings or drizzled over pizzas.
