Porcini mushrooms, also know as Cepes, are rich, aromatic and amazingly versatile. Dried porcini mushrooms have a firm texture that goes well when served with beef, veal or fish. Once dried their flavour is concentrated and they add a distinctive mushroom taste to sauces, risottos, casseroles, stroganoff, vegetable dishes, scrambled eggs and pies.
To rehydrate, soak the mushrooms in boiling water for 30 minutes. Drain, rinse and dry the mushrooms and enjoy them in your favourite recipe.
Try adding some to a potato gratin to create a flavourful side dish that would be the perfect accompaniment to any meal.
