Moroccan carrot & orange blossom salad.

1 lb carrots peeled and coarsely grated
1/2 cup raisins
1/4 cup extra virgin olive oil
2 Tbsp honey
2 Tbsp + 2 tsp freshly juiced lemon juice
2 Tbsp + 2 tsp orange blossom water
3/4 teaspoon ginger powder
1/2 teaspoon cinnamon or more to taste
lightly sprinkle salt & pepper to taste
garnish with chopped fresh mint

Combine all the ingredients except mint. Chill in refrigerator several hours or overnight. Serve garnished with mint leaves. Some lightly toasted almond flakes or pine nuts also go well with this salad!
