Allspice ground also known as Pimento, is a key ingredient in Caribbean jerk seasoning & can be used in both sweet & savoury dishes. often mistaken for a blend of spices but is so-named because of its rich, sweet scent & flavour reminiscent of spices such as cinnamon, cloves & ginger. In addition to Caribbean cuisine, allspice combines beautifully in Christmas puddings, cookies, in beef casseroles, pies or meatloaf for a warming flavour. Allspice is a good flavouring for meats – add a little to seasoning for grilled meats to bring a really delicious depth of flavour & spiciness.Try adding it to stuffing’s nut roasts, stews, sausages, ketchup, sauces, jams & pickles. Add to spiced breads & cakes & use to make mulled wine & spiced cordials. Try roasting sweet potatoes & carrots together with a drizzle of honey & light sprinkling of pimento.
